Tórtola is the wine that represents our project. Giving value to what has always been here and should never have been lost. This wine is a reinterpretation of a classic blend from our region:
Cencibel, the so-called “tinto fino,” and Tinto Velasco, known as “tinto basto.” Together, these varieties create a perfect balance between freshness, character, and depth, demonstrating that
native varieties have a leading role in the future.

    • Variety and Location: Cencibel “Macatela, Villarrobledo. Tinto velasco in Mota del cuervo.
    • Vineyard: Organic and minimalist
    • Type of soil: Clayey with a limestone base
    • Field work: Green pruning, vegetation management, and cluster thinning
    • Harvest date: Mid September
    • Type of harvest: Manual in 12 ka crates. Divided into morning sun and afternoon sun
    • Grape processing: Cold maceration for 5 days
    • Fermentation: Between 24 — 26 degrees Celsius Post- fermentation maceration for 15 days
    • Natural clarification and stabilization
    • Bottling: Bottled in December 2024
  • 12 months in 500 liter French oak barrels.
