Tórtola is the wine that represents our project. Giving value to what has always been here and should never have been lost. This wine is a reinterpretation of a classic blend from our region:
Cencibel, the so-called “tinto fino,” and Tinto Velasco, known as “tinto basto.” Together, these varieties create a perfect balance between freshness, character, and depth, demonstrating that
native varieties have a leading role in the future.
- Variety and Location: Cencibel “Macatela, Villarrobledo. Tinto velasco in Mota del cuervo.
- Vineyard: Organic and minimalist
- Type of soil: Clayey with a limestone base
- Field work: Green pruning, vegetation management, and cluster thinning
- Harvest date: Mid September
- Type of harvest: Manual in 12 ka crates. Divided into morning sun and afternoon sun
- Grape processing: Cold maceration for 5 days
- Fermentation: Between 24 — 26 degrees Celsius Post- fermentation maceration for 15 days
- Natural clarification and stabilization
- Bottling: Bottled in December 2024
